Now this is a cake!!!
OK, not one of those amazingly beautiful things I dream about decorating. Nothing you will see on "Cake Boss", but it does have a certain rustic beauty.
I mean look at all this stuff, and it's just on the outside...
Banana Slices
Pecans
Marshmallows
And a rich chocolate fudge drizzle!!!
And the inside is a moist chocolate dream...
Here's what I did...
1 Cup (2 sticks) Butter softened
2 Cups Sugar
2 tablespoons baking Cocoa
1 1/2 Cups all purpose Flour
1 1/2 Teaspoons Baking Powder
1/4 Teaspoons Salt
1 1/2 cups chopped Pecans
1/2 cup Pecans leave them whole
2 teaspoons Vanilla
1 - 10 ounce bag miniature marshmallows
2 teaspoons Vanilla
1 - 10 ounce bag miniature marshmallows
2 bananas cut into thin slices
Rich Fudge Icing
1/2 cup (1 stick) Butter
1/4 cup baking Cocoa
1 pound Confectioner's Sugar
1/2 Cup heavy cream
1 teaspoon Vanilla
For the cake, combine the eggs, butter, sugar, cocoa, flour, baking powder and salt and mix well
Stir in the chopped pecans
Pour into greased medium sized cake pan and small cake pan so you get that layered look.
Bake at 325 degrees for 40 minutes. Let stand to cool. Spread Marshmallows over the large cake and add the small one on top. Garnish the sides and top with whole pecans and banana slices, add more marshmallows to the top
For the Icing, combine the butter, baking cocoa, confectioner's sugar, cream and Vanilla in a bowl and mix well if needed, thin with 2% milk.
Drizzle the icing over the marshmallows

Wow what a cake! We love pecans and recently found out how good they are for you. The ones on the cake are beatiful and hard to find in the grocery. We order from www.pecantreats for big fresh ones like those.
