Tomato Salad with Roasted Garlic, Olives and Pearl Mozzarella Balls - 52 Do Ahead Salads, Side Dishes


This very simple salad is slightly limited.  The tomatoes MUST be as fresh as possible.  Sadly, winter tomatoes lose a lot of their taste due to extra care needed to keep them looking right during the long shipping distances (South America usually) and extra care (chemicals) used to keep the illusion of freshness.

Just a little hint, the smaller the tomato in winter the more flavor.  So avoid the bug beefsteak tomatoes and aim for the tiny cherry tomatoes or plum tomatoes.

OR... Just really look forward to fresh local tomato season when you can grab one from your own back yard garden (or the local Farmer's Market).  There is NOTHING like a fresh tomato!


OK... Here's what I did...


Tomato Salad with Roasted Garlic, Olives and Pearl Mozzarella Balls


Ingredients
  • 2-3 Large Fresh Tomatoes, sliced 1/2 inch thick, then cut in half moons
  • 6 Cloves Garlic, Roasted in a drizzle of Olive Oil, CHopped fine
  • 1/4 Cup Black Olives, Chopped
  • Several Basil Leaves, Sliced into slivers
  • 1/2 Cup Pearl Mini Mozzarella Balls
  • Drizzle of Olive Oil
  • Large Pinch Sea Salt
Cooking Directions
  1. All you need to do in advance is roast the garlic... Pre heat oven to 300 degrees. Peel garlic cloves, Lay in an Aluminum Foil sheet, drizzle with olive oil and a small pinch of Sea Salt. Seal the aluminum foil and roast in oven for 1 hour.
  2. After the hour, chop the garlic which is now soft and tastes a little sweet.
  3. Combine the garlic, and all ingredients to make an attractive fresh cold seasonal Tomato Salad
  4. Serve Chilled and ENJOY!


This would make a fantastic lunch on it's own, or even a meatless Monday big salad...

Or a fantastic way to open and brighten a BBQ table...

Panzanella Beer Bread and Tomato Salad - 52 Do Ahead Salads



Panzanella- "Panzanella or panmolle is a Tuscan salad of bread and tomatoes popular in the summer. It includes chunks of soaked stale bread and tomatoes, sometimes also onions and basil, dressed with olive oil and vinegar"
OK... Let's get two  disclaimers out of the way forst.  Much as I like to make authentic Italian dishes (For fun, take a look at my "52 Authentic Italian Recipes" page).  This is not authentic Panzanella.  I took a BIG liberty and adapted to my tastes.

Authentic Panzanella will have stale bread soaked in water and then squeezed.  I have tried this in authentic Italian restaurants and followed careful directions in a book and from a TV episode from a famous Italian-American chef... Did not at all care for any of those versions.

My version... LOVED IT!!!  the bread was not stale, instead I toasted the cubes with a little Olive Oil drizzle under the broiler.  Then, instead of soaking I soak the Onions, Peppers and Tomatoes in a vinaigrette over night.  Instead of the bread soaking I just fold the cubes into the soaked vegetables, flavoring the bread but still letting it mostly save it's crunchy texture.  For me at least... MUCH BETTER (Sorry famous Italian-American Chef).

Next disclaimer is an apology to my Mother and my Southern Baptist roots.

I made this with a hearty loaf of Beer Bread.

Just yesterday I posted my version of Beer Bread (The easiest to make of any fresh made bread).  I made this with a very hearty English Porter style Beer (My Hometown, Kansas City's own Boulevard BULLY! PORTER).  While cooking, the alcohol does cook out (Did you read that, Mom???), leaving the dark roasted hops and malts that flavor the beer but NO Alcohol.  Beer bread is always dense and holds up well to the tossing with the tomatoes without breaking up.  Remember I like that texture.  This bread was a perfect choice for the salad.  Loads of flavors, strong enough to survive being tossed around and able to be flavored with the vinaigrette, but not lose it's texture (not mushy).

And just to really make you go back and look, I used a cup of the fresh made Jam Jar Honey Mustard Vinaigrette that I posted yesterday as well.  Jam Jar vinaigrettes are about as easy as possible to make.  Well under 5 minutes and always better when you can control the salt, sugar and preservatives that are in so many of the store bought over-processed salad dressings.

And so finally, enough apologies, time for the heart warming part of the post.  This recipe is perfect when you can get truly fresh ingredients.  Heirloom Tomatoes are all over the place this time of year.  As close as your area Farmer's Market, maybe even your own back yard or any well stocked produce section of a grocery store.  There is nothing like a fresh tomato.  Of all of God's bounty, for me at least, I measure everything by the taste of that tomato.  the salad shown is loaded with red ripe tomatoes, beautiful flavorful yellow heirloom tomatoes as well as some sweet Red Onions that are best in season as well right now.

So, this recipe would be my seasonal gift to my friends at family... Maybe for a family gathering, Holiday meal, neighborhood BYODish party or for my personal favorite, the Church PotLuck dinner.

This is simple to make... A little special,  a quick made Bread (Ready in an hour, no rise time), a quick made vinaigrette (well under 5 minutes),  An overnight marinade (actually a little pickling of the red onions happens) a little stirring and a well timed folding in of the bread cubes and you have a fresh made, home made, brag worthy dish that is always well received. One of those, "Anyone can make this" Dishes that looks very complicated. Plus, as I like to say...

Church PotLuck Suppers are a chance to share God's Bounty with your Church family and friends. That bounty should be made with love and caring.


OK... Here's what I did...


Panzanella Beer Bread and Tomatoes Salad


Ingredients
  • 1/2 Loaf Beer Bread cut into 1 inch cubes, cubes toasted, can substitute almost any other type of bread
  • 1 Cup Honey Mustard Vinaigrette (Fresh made or can substitute store bought)
  • 2-3 Large Fresh Heirloom Tomatoes, in photo I used one red and one yellow, Chopped about quarter size (can substitute freshest available, in winter, usually smaller Roma Tomatoes)
  • 1 Large Sweet Red Onion, rough chopped (can substitute a "regular" Red Onion, if you do, slice the Onion is thin half moon size rings)
  • 2 Large Green Bell Peppers, Core and seeds removed, chopped same size as the onion and tomatoes
  • Several Basil Leaves, sliced into ribbons
  • 2 tsp Salt
  • Several grinds of a Cracked Pepper Mill
Cooking Directions
  1. In a large bowl, mix Tomatoes, Onion, Peppers, Basil, Salt and Pepper and mix in the Vinaigrette. Cover with plastic wrap, refrigerate and let sit over night.
  2. 3 Hours before it is time to serve, gently fold in the toasted bread cubes.
  3. Just before serving give the mix one last stir.
  4. Serve chilled and Enjoy!!!


For extra color, texture and a sweet pickling taste, top with some Zesty Pickled Red Onions!!!

It happened to be scheduled around a church work day when we were expected to weed, polish and do general cleaning and maintenance around the church (you know, back in the day when there were no no-wax floors and church pews smelled of Old English furniture polish). I am of course paraphrasing, but as I recall the pastor said,

"A potluck, like a church requires work. At a potluck everyone is expected to contribute.. At a church no one should come empty handed and no one should leave unfed".
I will confess that in my youth I brought more store bought plastic spoons and forks than I ever brought covered dishes and crock pots of fresh made love and caring delights. But now that I have become a hobbyist cook, I occasionally am reminded of those days and people from my youth. I reminded and I do wish that I could drop a dish of some new creation on those old tables at my fondly remembered Liberty Baptist Church.  Tables covered with newspapers and loaded with God's bounty prepared with love and caring... Enjoy

Watermelon, Tomato and Apple and Feta Summer Salad - 52 Do Ahead Salads


Summer time and the livin' is easy!!!

Time for the Snoopy Happy Dance every day!  And also time for a cool refreshing change of pace summer salad!

This was finished in under 10 minutes.  INCREDIBLY EASY and yest filled with a variety of flavors, textures and deliciousness...

Sweet summer watermelon,
Crispy crunchy apples.
Savory ripe tomatoes,
the gentle bite of shaved sweet red onions
and garnished with seasoned Feta and even fresh Mint Leaves!
What's not to love!

Summertime Happy dance time indeed!


OK... here's what I did...


Watermelon, Tomato and Mango Summer Salad


Ingredients
  • 1 pound of thin (about 1 inch) Sliced Seedless Watermelon, cut into small bite size pieces
  • 3 Firm Roma Tomatoes, Large Diced
  • 2 Apples, cored, skin left on, diced
  • 1/2 Sweet Red Onion, shaved thin slices
  • 1 Cup Crumbled Feta Cheese
  • A Dozen fresh Mint Leaves, thinly sliced into Chiffonade style ribbons
  • Drizzle of white Balsamic Vinegar
Cooking Directions
  1. Could not be easier... Prep all of the ingredients first.
  2. Then mix together everything except the balsamic vinegar and mint
  3. Set this salad into a colander, set into a bowl (so the watermelon and tomato liquid can drain out of the salad. Set this into the refrigerator to chill overnight.
  4. Just before serving, transfer into a serving dish, drizzle a little of the balsamic vinegar and garnish with the Mint
  5. Serve Chilled and ENJOY!!!

Creamy Dilly Broccoli Slaw - 52 Salads, Condiments


Some days you need an easy FAST dish that you can still pass off as homemade.

This is the first post of probably a dozen that I will be doing for the menu from my recent BIG ((a dozen guests) with 10 dishes... plus drinks and a fresh made BBQ sauce)... BIG Labor Day BBQ Party!  This would indeed make a great dish to take to a Church PotLuck, big family gathering, any Holiday meal (is it too early to start working on a Thanksgiving menu???).

Of course, the taste is fantastic and the ease is amazing (5 minute assembly time) but there is one big advantage, especially for that big BBQ is that the dish takes best when it has a chance to sit several hours or even over night.  Time for the spices to mix and mingle and flavor everything.  Any dishes you can complete in advance gives you that much time to work on the dishes that need attention closer to serving time.

For the BBQ I garnished with Jalapeno pepper slices (mostly for color).  If I were taking this for a PotLuck, I would probably leave them out.

The "Main" Ingredient is a bag of store bought Broccoli Slaw mix.  Let them do all that slicing.  So all you have to do is measure a few ingredients and mix.  The best side dishes are always the ones you can make the day before...


OK... Here's what I Did...


Creamy
Dilly Broccoli Slaw


Ingredients
  • 1 Package Broccoli Slaw
  • 3/4 Cup Mayonaise
  • Zest and Juice of 1 Medium Lime
  • 1 TBS Olive Oil
  • 1/4 Cup Fresh chopped Dill (can use dry herbs if needed)
  • 2 TBS Sugar
  • 1 tsp Salt
  • 1 tsp Cumin
  • For Garnish, Optional, thinly sliced Jalapeno Pepper
  • For Garnish, pinch of sweet Paprika
  • For Garnish, 1 tsp of dried Chives
Cooking Directions
  1. Whisk together the Mayo, Lime zest and Juice and Olive Oil.
  2. Add the spices
  3. Mix the Broccoli Slaw with the wet ingredients to coat.
  4. Chill in the refrigerator for several hours to allow the flavors to mingle
  5. Garnish with thin Jalapeno pepper slices, Chives and a pinch of Sweet Paprika
  6. Serve Chilled and ENJOY!!!

Dressed Up Mixed Greens Salad with Hazelnuts and Jam Jar Honey Vinaigrette - 52 Do Ahead Salads


This was unexpected...

I started out making this as a topping for a beautiful Sugar/Salt Cured Hot Smoked Salmon Filet (come back tomorrow for that recipe).  This was to be served at my BIG 12 guests Labor Day end of summer BBQ.  Then I started hearing from one of my favorite guests... She was on a diet and asked if I minded if she brought a salad.  Well, I had already assured others that there was no need (or honestly, desire on my part) for them to bring additional dishes.  So I decided to add a dish and simply make extra of the salmon garnish and serve this up as a salad.

It certainly looks spectacular, but also tasted just as good as it looked... The apples had a crisp bite, the cherries added a sweetness, the fresh made Jam Jar salad dressing perfectly balanced... Like I said, spectacular.

But easy as well... The mixed greens came from a bag... The cherries came from a small bag... The apples and onions were just a fast slice job and the hazelnuts were just as fast.  All of the work (honestly, if I spent 10 minutes on this I would be surprised) can be done well in advance with just a fast 2 minute assembly just prior to serving.  Even without the fish (tomorrow), this was ... As I said...

Spectacular, Easy and Deliciously Unexpected!!!


OK... Here's what I did...


Mixed Greens, Apples, Hazelnuts, Vidalia Onions and Cherries Salad 


Ingredients
  • For the Jam Jar Honey Vinaigrette Dressing
  • 1/4 Cup Apple Cider Vinegar
  • 2 TBS Honey
  • 1 TBS Whole Grain Country Style Mustard
  • 1/4 Cup Olive Oil
  • Salt and Pepper Pinch of Each
  • For the Salad
  • 6 Cups Baby Mixed Greens
  • 1/2 Sweet Vidalia Onion, Sliced thin, half moon rings separated
  • 2 Medium Granny Smith Apple, cut into thin even slices
  • 1 Cup Dried Cherries
  • 1 Cup Hazelnuts, Chopped
Cooking Directions
  1. For the Vinaigrette...
  2. add all ingredients together in a pint size Canning Jar
  3. close lid tight and shake like hell for 30 seconds
  4. Check to make sure the mix has emulsified and repeat if needed.
  5. Reserve 1/4 Cup to drizzle on a Salmon Filet
  6. For the Salad...
  7. Mix 1/3 Cup of the Vinaigrette with the apple slices, coating well.
  8. Chill this in the refrigerator for 30 minutes, allowing the apples and onions to slightly pickle and soften them.
  9. Immediately before serving, Toss Greens, Apple Slices and Cherries, and the vinaigrette coated onions together
  10. Taste the salad to make sure the salad is well seasoned and coated with the dressing. Add more as needed, but be careful... usually less is more.  Reserve 2 Cups of this to top the Salmon
  11. Garnish with a generous sprinkling of Hazelnut chips, reserving some for garnishing the Salmon
  12. Serve chilled or room temperature and ENJOY!

Italian Deli Pasta Salad - 52 Do Ahead Salads


Did you happen to catch yesterday's post???

I had a Whoop de Doo.

15 guests in my back yard and LOTS and LOTS of food!  Started posting the dishes with a spectacular Pistachio Crusted Spiral Pork Chop Bite (yes, that's bacon, pork wrapped pork, Summer in my back yard!).

But as much as I love grilling for a Whoop de Doo, Man does not live by grilled meats alone (sigh).  So as much as I ponder the meats, the side dishes are just as important.  I like this as a side since it can (and actually tastes better if..) made in advance.  Several hours or even overnight.  This frees you up to do the last minute grilling.

I also love it cause it tastes soooo good!

It smells and tastes just like a visit to an Italian Deli!

This recipe does fall under the category of, "who does he think he is???".  It was inspired by a recipe I saw in this month's Food Network Magazine.  I made a few changes that I believe really make this a winner.

First the major change... Deli style Brown Mustard Vinaigrette added to the mayonnaise.  After all, what's deli food without Deli Style Brown Mustard (plus it makes this salad unique)!

Next... Italian spices.  Specifically, Herbes de Provence.  Hey... It's an ITALIAN DELI, use Italian spices.

And finally, Tomatoes.  I used Roma tomatoes cause it almost sounds like Rome (pretty famous Italian City), but mostly cause I like tomatoes.

Served cold, creamy, vinegar tasting and LOADED WITH ITALIAN DELI TASTES!!!

OK... here's what I did...


Italian Deli Pasta Salad


Ingredients
  • 1 Pound Rotini Pasta, Cooked according to package directions (Or, 1 minute less for Al Dente Texture), Drained
  • 1/4 Cup Mayonnaise
  • 1/4 Cup Deli Style Brown Mustard
  • 3 TBS Red Wine Vinegar
  • 1 - (16 Ounce) Jar Giardiniera (Pickled Vegetables, found in the pickle relish section of the store), drained and chopped
  • 1 Cup Diced Provolone Cheese
  • 1 Cup Diced Salami
  • 1/4 Cup Herbes de Provence (or substitute fresh chopped herbs of your choice)
  • 2 Firm Roma tomatoes, Diced
Cooking Directions
  1. Prepare Pasta according to package directions. Couple of tips, Salt (not oil) is what makes the pasta NOT stick together. Make the water salty as the ocean (about a half cup). Don't worry, most drains off), And speaking of draining. Just drain the pasta, do not rinse. the starchy water coating helps the sauce to absorb into the pasta instead of just pooling (usually on the bottom of the bowl). Finally, only cook the pasta for one minute less than the box says for a more chewy al Dente taste).
  2. While the pasta is cooking, thoroughly mix together the Mayonnaise, Brown Mustard and Red Wine Vinegar.
  3. When pasta is drained, return to pot, add sauce and mix.
  4. Now add all remaining items and stir to combine.
  5. Cover and chill overnight (or for a couple hours at least in the refrigerator to allow the flavors to mix).
  6. Serve Chilled and ENJOY!!!

Ages ago, literally almost a half century ago I was listening to our pastor talking about a PotLuck Dinner. It happened to be scheduled around a church work day when we were expected to weed, polish and do general cleaning and maintenance around the church (you know, back in the day when there were no no-wax floors and church pews smelled of Old English furniture polish). I am of course paraphrasing, but as I recall the pastor said,

"A potluck, like a church requires work. At a potluck everyone is expected to contribute.. At a church no one should come empty handed and no one should leave unfed".
I will confess that in my youth I brought more store bought plastic spoons and forks than I ever brought covered dishes and crock pots of fresh made love and caring delights. But now that I have become a hobbyist cook, I occasionally am reminded of those days and people from my youth. I reminded and I do wish that I could drop a dish of some new creation on those old tables at my fondly remembered Liberty Baptist Church.  Tables covered with newspapers and loaded with God's bounty prepared with love and caring...
