GRILLED Iced SWEET Tea (NO SUGAR!!!) - 52 Backyard Drinks


This does indeed fall under the category of "Secret Extras".  When you grill lemons, the juices heat.  When the juices heat, the natural sugars in the fruit are released and intensified.  So much so that when carefully added to the tea, the tea becomes as sweet as Southern Sweet tea WITHOUT any added sugar.  Just a couple of tricks and tips to know...

First, scrub the lemons under hot water with a scouring brush.  Most store bought fruits with rinds have been treated with a thin wax coating.  This helps preserve the fruit, keep the bright color and protects from bruising.  It's also a very good idea to scrub your lemons before zesting them for the same reason, but I digress...

Second, use a HOT grill.  Direct heat (fruit directly over the hot coals).  Be sure the grates are also HOT before grilling them.

Third, use tongs to pick up the lemons from the grill, but lightly.  DO not squeeze when over the coals.  But just before dropping them into the pitcher of tea, give them a little squeeze.  This will release the juices and open the cooked flesh up to allow the tea and juices to swirl together.

And finally, don't be afraid of the grill marks and slight charring that happens.  Your tea will not have a burnt taste.

And viola... Southern SWEET Tea with no sugar added... really, try it!


OK... Here's what I did...


GRILLED 
Iced SWEET Tea 
(NO SUGAR!!!)


Ingredients
  • 1 Gallon Freshly Brewed Tea, Chilled in the fridge for an hour or two
  • A Big Bunch of Ice Cubes (Extra Cold)
  • 3 Medium Lemons, sliced in half
  • A Stirring Stick
  • Your Loyal and Trusty Servant, A Good HOT Grill
Cooking Directions
  1. Brew the tea
  2. Chill the tea
  3. Add ice to the tea
  4. Over direct heat on a HOT Grill, place the lemon halves open side down.
  5. Grill for about 5 minutes, until the lemons get very soft and grill marks start to appear.
  6. Carefully lift from the grill (if you squeeze them with tongs, the sweet juices will pour out) and drop into the tea, with a little squeeze when over the tea to release the juices.
  7. Stir with stirring stick
  8. Serve refreshingly COLD over ice and ENJOY!

Authentic Southern Sweet Tea and the Arnold (Winnie) Palmer Drink - 52 Backyard Drinks


 It's been called the house wine of the south and in fact it is drank more often around our little corner of the Cul de Sac here in Kansas than any wine.  Sweet Tea, different than sweetened tea, memorable and just better,

It does take a little time, as you seep the tea bags for a couple hours in gently simmering water.  It also takes a little extra effort as you need to make a simple syrup to add the sweet to sweet tea... but again... Worth it.

Here's how to do it...

2 gallons Water
5 big FAMILY SIZE Luzianne tea bags
1/2 tsp Baking Powder
4 Cups Water
4 Cups Sugar

I have a BIG three gallon pot that I make my tea in.  Fill with water and bring to a low simmer
Add the tea bags and simmer for 2-5 hours
Add 1/2 tsp of Baking Powder.  this will take out the bitterness of the tea and make the drink MUCH smoother
After the simmering is finished, in a smaller pot, bring 4 cups of water to a gentle boil
Add 4 cups of sugar and stir constantly for about 3 minutes.  The water and sugar will turn from cloudy to clear as the sugar is absorbed into the liquid
Add the simple sugar to the tea, cool, add ice and...

Serve COLD and ENJOY!


You are about to learn more than you ever wanted to know about the Arnold Palmer Drink.

The basic Arnold Palmer is simplicity in itself...

Make some Tea
Make some Lemonade
Add ice cubes to a glass
Pour the glass 3/4 full with Tea
Top off the glass with Lemonade

Sweeten as you like.

But wait, there's more... How about an Arnold Palmer Cocktail

If you add a shot of Rum, you have a Dirty Palmer
If you add a shot of Vodka, you have a Dirty Arnie
If you add a shot of Cointreau, you have a Dirty Florida Golfer
This last one I made up... I was out of Vodka and the bottle of Cointreau was calling to my inner inspiration... And I like the name!
But wait, there's more... Sweet Tea makes a different drink...

But around our little corner of the world, we make a BIG batch of authentic Southern Sweet tea, complete with simple syrup and a pinch of baking powder

OK, stay with me,I also made real fresh lemonade...

Juice of 6 lemons (1 Cup)
3 Cups Water
1 cup of the Simple Sugar
Mix well
Add slices from 1 lemon
Allow to rest for 2 hours while the oils from the lemon rind infuse into the L-ade

And now, finally here's what I did...

I filled a glass with ice
filled 3/4ers of the glass with Sweet tea
Filled the rest of the way up with Lemonade
Mixed and enjoyed!

BUT... 

This in fact is not an Arnold Palmer drink. When made with Southern Sweet tea in place of Northern Sweetened tea it is called a Winnie Palmer (named for Arnie's wife)

That's about enough...   Enjoy, come on by and have a seat and visit for a spell...

Vanilla Mint Sweet Lemonade (BEST EVER) - 52 Backyard Drinks


If Southern Sweet Tea is the house wine of the south, then this version of Lemonade is from the gourmet wine section.

So many layers of flavors, from the aroma of the vanilla that whispers around your nose as you lift the glass to your mouth to the Earthy Peppermint flavors that surround your taste buds.

If you saw yesterday's post I made a batch of Mint Simple Syrup that I used to sweeten the pucker of the lemons.  Sure enough, the syrup adds a sweetness that twice the volume of sugar could not add.

Plenty of pucker... plenty of sweet and hints of mint and vanilla.  This BY FAR is going to be the best Lemonade you have ever had.  Refreshing for any Summer day or to remind you of a Summer Day!


OK... Here/s what I did...


Vanilla Mint Sweet Lemonade


Ingredients
  • 16 Cups Water
  • 8 Large Lemons, scrubbed over warm water
  • 2 Cups (1 Pint Jar) Mint Simple Syrup
  • 8 Sprigs Fresh Mint with many Leaves on the Sprigs
  • 2 TBS Madagascar Vanilla
Cooking Directions
  1. If you need, make 2 Cups Mint Simple Syrup or use the Pint Jar you "canned" ahead of time.
  2. In a large pot over medium high heat, bring the water to a simmer.
  3. While the water is heating, halve the lemons and juice them thoroughly.
  4. Add the lemons and juice to the simmering pot. Add the Mint Sprigs and the Vanilla and stir to combine. Bring to rolling boil and immediately remove from the heat. Cover and allow to seep for 1 Hour.
  5. Strain to remove Lemon halves, seeds and mint.
  6. Add Mint Simple Syrup to taste. Allow to cool in the refrigerator for a few hours.
  7. Serve COLD over ice and ENJOY

Honey Saz... Sazerac Cocktail - Official Drink of New Orleans for Mardi Gras - 52 Backyard Drinks


Mardi Gras is upon us!

But you better hurry... Fat Tuesday, beginning of lent and the end of the party (for awhile anyways) is less than 2 weeks away.

Time to start a New Orleans themed dinner party with the official drink of New orleans (by law, in 2008 the Louisiana Legislature named the Sazerac the official Cocktail of New Orleans)!

 ABSINTHE, the secret ingredient!

I will leave tales of the Green Fairy (Absinthe) for fans of Baltimore to tell (just cause I predict Baltimore to win, I will be rooting for New Orleans). But the quick version...

The legendary drink potentially caused hallucinations (Ernest Hemingway once described, "walking on legs of tulips" after a night of drinking Absinthe). Baltimore's second most famous resident (Babe Ruth would be the most famous), Edgar Allen Poe drank himself to death on this drink. Unfortunately (or fortunately), the formula for making true Absinthe (from the 1800's) is no longer available in the United States. But, the Absinthe that is sold in the states does make a terrific ingredient in the Sazerac Cocktail. if you have been reading my blog for a few weeks, I make no secret of my love of ALL things Cajun and for the city of New Orleans! The Sazerac was first created in New Orleans in the 1830's. Some argue (they would be wrong, but they do argue) that the sazerac was the very first cocktail ever created (it was among the first). No trip to New Orleans, no Super Bowl (with the Saints playing) party, nor even Mardi Gras party would be complete without a sazerac cocktail.


"Hurricanes are for tourists.
Sazeracs are for natives."


Here's the current version of the historically correct recipe...


1/2 teaspoon absinthe, or Herbsaint (a New Orleans brand of anise liqueur)
1 teaspoon of simple syrup (or 1 sugar cube)
4 dashes Peychaud's bitters

1 small dash, a scant drop, of Angostura bitters

2 ounces rye whiskey.
Strip of lemon peel


Combine all ingredients in a shaker glass with ice.  Shake like heck and drain into a highball glass.  Straight up, no ice.

I have been known to drink one or two of these in my day. In fact, during a recent trip to New Orleans, I did my best to single-handily rebuild New Orleans, one sazerac at a time. (click HERE to read of my 8 sazeracs during that trip). While I very much enjoy the classic recipe above, I have made just a couple of small changes to make an all new version which I find a bit smoother (especially if you are trying to get non whiskey drinkers to give this a shot).

So, here's my slightly altered version of the drink... For me, I prefer one of these..

The Honey Saz....

1/2 teaspoon absinthe, or Herbsaint (a New Orleans brand of anise liqueur)
1 teaspoon Honey
4 dashes Peychaud's bitters
 
1 small dash, a scant drop, of Angostura bitters

2 ounces rye whiskey. 
Strip of lemon peel


Combine all ingredients in a shaker glass with ice.  Shake like heck and drain with the ice into a highball glass. 

In place of the simple syrup, I add a teaspoon of honey. This needs to be mixed very well (Shaken like heck) so that it is all absorbed into the whiskey.

The drink is also meant to be served chilled and up (no ice). I enjoy the romance of clinking ice cubes, so I do serve it on the rocks. I am fortunate enough to have an ice maker that makes larger ice cubes. If you are using crushed ice (don't, but if you do), store your rocks size glasses in the freezer prior to serving, and shake and strain the liquor quickly in a cocktail shaker. the longer you shake, the more the ice will melt and water down the drink. Strain into the fresh from the freezer glass and the drink will stay cold for about 15 minutes. If you take more than fifteen minutes to drink this, do not serve over ice (no matter how big and cold the cubes). Better to have a warm sazerac than a watered down sazerac.

Florida Hurricane - New Orleans Mardi Gras Cocktail - 52 Backyard Drinks


Alright, let's address the pink elephant in the room... This is a wimpy version of the classic New orleans drink.  I am old as dirt, and about as opinionated about things as an old as dirt guy deserves to be.  In my youth I could slam down a Hurricane made with 151 Rum, Grand Marnier, More rum, and more and more.  I have seen recipes (and drank 'em) with up to 7 ounces of booze in a glass.  If you are headed to New Orleans and want to experience that... Do it.  Just for me and my guests, I prefer not to end up puking in the bushes.  A real authentic New Orleans Hurricane has a reputation... and it deserves it.

Now, these on the other hand are refreshing.  Just enough booze to make a party festive.

So instead of 7 ounces of booze... only 2.  And even that can be cut in half if you like or simply left out and make virgin versions.

Yeap, it's a wimpy drink.  But certainly tasty and festive.  And I LIKE 'EM!

Life in the Cul-de-Sac.

One other change, I prefer Orange Juice instead of the more traditional Passion Fruit juice.  Easier and cheaper to find, and for me, just makes a tastier drink.  So the "Florida" in the name Florida Hurricane could either mean Florida Orange Juice... Or it could mean the other well known Florida tradition of Florida Seniors and their feisty attitude about knowing and liking what they like.

I make these a lot and I LIKE 'EM!


OK... Here's what I did...


Florida Hurricane


Ingredients
  • 1 OZ Coconut Rum
  • 1 OZ Dark Rum
  • 1 Cup Orange Juice (can substitute Passion Fruit Juice)
  • 1 OZ Lime Juice
  • 1 OZ Grenadine
  • Splash Maraschino Cherry Juice (Can substitute 1 OZ Honey)
  • Be creative with Garnishes... Maraschino Cherries, Pineapple Chunks, Orange Slices, even Mangoes and Papayas
Cooking Directions
  1. I like to make pitchers of these, simply multiply the ingredients by 8 and stir to mix.
  2. For a single cocktail, combine all liquid ingredients in a shaker glass with a generous amount of ice.
  3. Shake like heck.
  4. Pour into a Hurricane or Tulip glass with ice.
  5. Garnish with a long skewer with plenty of Fruit... Especially the Cherries. Love the Cherries.
  6. If serving a pitcher, have several skewers of fruit ready, along with glasses filled with ice.
  7. And ENJOY

Peach Sangria - Go ahead, add Strawberries and Apples - 52 Backyard Drinks


It's kind of like a fruit cocktail... With Wine!

And why not?  Give those pieces of sliced fruit time to mix mingle and flavor the mix of wine and rum and you have delicious pieces of fruit.  At the same time the juices and natural sugars of the fruit mixes, mingles and flavors the drink.

There really isn't a bad time to serve this.  BUT, the best for me... Invite your best friends to a simple back yard BBQ.  As they arrive,serve up a glass of this while you work on the final touches of whatever is coming off the grill. Drink, Appetizer and conversation starter all in one.

ENJOY!


OK... Here's what I did...


Peach Sangria - Go ahead, add Strawberries and Apples


Ingredients
  • 1 Bottle Sweet White Wine, like a Riesling
  • 1 Cup Coconut Rum
  • 2 Ripe Peaches, Thin SLices
  • 2 Firm Granny Smith Apples, Thin Slices
  • 1/2 pound Strawberries, Thinly SLiced
  • 16 Ounce Bottle Sparkling Soda Water to top each Glass
Cooking Directions
  1. Combine Apples, Peaches and Strawberries in a Large Pitcher, Cover with the Rum. Add the White Wine and chill in the refrigerator for 3 hours.
  2. To serve, spoon fruits into glasses or goblets, pour liquid over top of the fruit. Top glasses of sangria off with a splash of soda water.
  3. Serve Chilled and ENJOY!!!

“Colors of the Caribbean” Lemonade with Passion Fruit Cognac - 52 Backyard Drinks




Well, good news for me, great news for the Cul de Sac... the now annual neighborhood BBQ party an dget together is now history.  Last year, over 50 people came... this year, There were a few stragglers that came by after I stopped counting at 73.  But 73 is a pretty good number.


But, the bad news, I was serving up pulled pork, dishing the side dishes, even wrote out a couple of recipes when asked, and just got too busy to take photos.  At one point I remember going into the house to hunt for my camera, couldn't immediately find it and decided hosting the party had to take priority over hosting the blog.


So in addition to a mild hangover, I now have to type this up, knowing that I let you all down.






But, I didn't let the Cul de Sac down... The gods and stars were shining on me, I selected the pig that lived a good and virtuous life, I learned from my past cook sessions, using my now famous Raspberry Chipotle Mop and finishing sauce to make a Carolina style Pulled Pork.


Spice Mixes I Love!I also used a rub of my own.


I used the formula for my "Big Easy in a Jar" Cajun Spice Mix, add Brown Sugar to the mix (2 parts "Big Easy in a Jar" to 1 part brown sugar).





I followed my three simple steps to a perfect BBQ, select the best meat (For pork shoulder, no large lumps of hard fat, nicely marbled fat, without large veins of fat running through, never frozen if possible), keep the meat moist (Mop every hour for the first 5 hours, every 3 hours after that), and the long and slow cook session.  Cooking at 225, it took 20 hours for the meat to get to the right temperature (195 degrees).


And it did not disappoint.  Compliments all around, techniques asked for and explained (although the time frame to get it right did seem to intimidate less enthusiastic cooks), but mostly, I was very pleased to serve up the absolute best pulled pork I have ever made.


The party started at 4 pm, plenty of food, plenty of fun.  We met new neighbors, renewed friendships we had missed while gone this year and was able to connect names and faces with the folks we wave to all year round without ever meeting.  The kids and the parents with kids stayed for a few hours, got a few games going ("Dads have to bat left handed whiffle ball" was very competitive, with the kids winning (but I think the dentist through the game in the 9th)).  By about 7, there were a dozen folks left sitting round the firepit.  A nice cool evening (in the 60's) was perfect for a night of laughs and stories.


Like I always say, the suburban Cul de Sac is the place to be, and my backyard is the place to be!


It was a huge success.  I highly recommend the party idea to everyone.  A little bit of work, but well worth it.




But, as a peace offering for not taking any photos, let me give you an incredibly simple recipe for what became a very popular drink yesterday.  So popular, one of the guys made a liquor run just to pick up a bottle of Alize Blue...



This has become my wife's favorite drink.  I posted this once as a guest post on OUR KRAZY KITCHEN, but it is worth the extra posting.


we wanted to have a theme drink to serve our friends while we bored them with our stories and photographs.

See that beautiful color of the ocean. This photo was taken in “the Baths” in Virgin Gorda, of the British Virgin Isles. I just fell in love with the colors of the Caribbean waters, and wanted to recreate this color in a drink.

So, I give you the “Colors of the Caribbean” Lemonade

Start with 1/2 a pitcher (about 5 cups) of your favorite Lemonade
Add 1 cup Blue Alize Liqueur (blue Alize is a French Cognac mixture with Passion Fruit, Cherries, Ginger and other exotic fruit juices).
Fill with ice
Garnish with Lemon Slices
Serve in tall Collins size glass, and garnish with Lemon Slices

Like I said, a huge hit at the party.  We went through two bottles of the blue Alize.  This is the recipe most asked for.  I have a feeling we will be seeing this around the neighborhood again.
