Easy Fast DELICIOUS Sweet Potato Mouse



OK, this is incredibly fast, easy and so incredibly tasty, you will pretend it took forever and 2 ingredients...


Only 2


I used 2 peeled sweet potatoes, I wrapped them in plastic wrap, microwaved them for about 3 and a half minutes.


They were so soft and easy to mash.  I put them in my kitchenaid with the whisk attachment.


I added...


1 small container of Greek yogurt.


And that's it.  Not complicated.  Reasonably healthy.  And delicious, beyond delicious... really.


Now, there are recipes out there, heavy cream, butter, honey, nutmeg, lots of ingredients.


Only 2 and you will love it.


BTW, these were a side dish for an incredibly complicated meal...


Fish fried in clarified butter
topped with shrimp poached in a herbasante' garlic butter
and tomato relish in a Beurre Blanc Sauce
