Pina Colada with a pinch of Nutmeg

Well, truth is, Jackie is not a fan of getting caught in the rain.  But she is pretty happy with a Pina Colada and the feel of the ocean... 2 out of three ain't bad.

But today it is all about the rum... And the CREAM OF COCONUT!

I am on a mission... No more of that prepackaged pina colada mix.  Once you try this, you will never go back (and you get so much more volume for your money... Better tasting drink and save money in the long run)...


It is only 3 ingredients, mixed in equal proportions, add a blender and even the most inexperienced bartender will have your guests singing like Rupert Holmes.

But it is the Cream of Coconut that is the key to making a GREAT Pina Colada.  Yes, this is available in most grocery stores.  Wal-Mart (the big ones, with the grocery stores) does carry it.  Liquor stores stock it in their mixer section.  Possibly in the Mexican section of the market.  It does exist in your town.  Cream of Coconut is thicker than coconut milk.  Kind of the consistency of condensed milk.  It makes your drink creamy and rich; as well as just a bit thicker.

I did add my own little extra flair at the end.  It added a taste that I liked, but also I just wanted an excuse to use my new toy...







The Nutmeg Grater


I saw it in use, and just had to have one.  A quick order from Amazon.com, and even here, relatively fast shipping, and I had it for my next in a long line of rum soaked weekends (rum soaked but well garnished).  Look, convenient place to hold whole nutmegs waiting to flavor my drink...

So the recipe...

1 part Pineapple Juice
1 part Cream of Coconut
1 part Cruzan Coconut infused Rum

Toss everything in a blender and blend for 30 seconds
Serve over ice

Grate with fresh Nutmeg if you are lucky enough to have a nutmeg grater.




Oh, and you can use this for grating Ginger as well...

and you knew the song would be here... Not terribly fond of the meaning (hey, two people were cheating on each other), but it is catchy...

  7. I am loving the idea of freshly ground nutmeg. I don't drink alcohol, but I'm thinking a virgin pina colada with fresh nutmeg sounds divine. (My inlaws recently went on a cruise and brought me home a bunch of nutmeg)
