Raspberry Chipotle SEA SCALLOPS




WHAT A BREAKFAST!


Our first morning in our new permanent temp housing, we are at the mercy of what foods we moved here from the hotel.  My big shopping trip for the week will happen later today.  I have been reading a few of your weekly menu planning posts, and I think I am set.  Not meaning to complain (I am 30 yards from the ocean and beach), but it is about a mile and a half walk to the store (all uphill).  I will take a cab back with a couple hundred dollars worth of staples and what I need for the week.  But walking up a hill to fetch an onion is now my option if I don't have it on my shopping list.  So, for the betters among you... what's the over/under line on numbers of trips to the grocery store this week?  My guess, in addition to today, 2 days out of the next 7 I will be hoofing it up to the store.


But, that is for later... today, let me tell you about my breakfast yesterday.  I had found a 5 pound bag of frozen sea scallops earlier in the week.  I have already made some GRILLED Bacon Wrapped Sea Scallops. I had eggs, some of the Caribbean Baked Goat Cheese Stuffed Peppers. So I knew that there was going to be omelets on the menu.  The only meat we had in the house was the scallops.  So, time to Za Za Zing em up a bit.




I just Fried em in a little canola oil. 




A little crispy on the outside, but still butter soft on the inside.




And then I Just put the sauteed scallops in a bowl and heated a little of the Raspberry Chipotle sauce I had brought from home (yes, the Fischer and Wieser, handcrafted one jar at a time, THE ORIGINAL ROASTED RASPBERRY CHIPOTLE SAUCE that I always rave about

If you are not lucky enough to have a jar, this is just too simple.  Use some BBQ sauce, some finishing glaze, even a little mustard mixed with a tad hot sauce.


I made another omelet the Julia Child way.  I added the last of the Caribbean Baked Goat Cheese Stuffed Peppers.


The whole plate... Not just a little good, A TON GOOD!


 Add a little Za Za Zing to the most important meal.

  1. These scallops in that wonderful raspberry chipotle sauce look incredible. I hope you eventually enjoy walking to the grocery store. Maybe at the end of two months you'll even look forward to it.

    I make one big trip to Whole Foods and trader joe's each week. And than an infinite number of trips to the local supermarket (across the street) for odds and ends. It's unreal.

    These look fantastic with the raspberry chipotle sauce!

  10. Wow! I am not a fan of what I think is a "tough" to chew seafood, but these look amazing. Anything dessert like I have to eat. Thanks for sharing and when you are not busy living my dream life please stop by my blog for a little something for you. Please know that I don't expect you to participate as it is time consuming!

  11. Can you believe I have never done a scallop dish..which was supposed to have scallops :) Always used them as a sub. How mean is that? This looks amazing and I am thinking maybe I can make this one..or actually an easier dish for scallops. The browned tops are making me very hungry now :)

  15. Scallops for breakfast? Wow! I usually make 2 trips a week-once for bigger shopping day and once for picking up more milk on our way home, or if I get a wild hair and want to make something I didn't already plan and buy for.
