Sesame Seed with Kosher Salt Herb Mix for 242sDay and "the Project"




And now, my herb mix trifecta postings are complete...



In the beginning... I am in love with my Cajun Mix.  just add brown sugar and you have a terrific rub for meat.  But, here in paradise, I mostly have been using this to blacken my fish and pork.

Next up, my now world famous (in my mind)...





"Not your Grandmother's Herbes de Provence"




Among the most useful of mixes.  Everything from bread to salsa, Potato salad to pesto, pizza to pasta; a pinch of Thyme, Rosemary, garlic and even citrus adds a little zing to just about anything.  And best of all, it is a terrific substitute for salt.


BUT...


Sometimes you want to add a little salt to something.  But, never one to use a simple solution when a more deliciously complicated answer is available, I use this mix often as well.


I especially like to add this as a topping to things that bake.  As the heat opens the sesame seeds, the oder fills your kitchen with smells that prepare you for something special...


Like on this loaf of bread...



And best of all, mix a batch up once every couple of months (up to six months); and it is always on hand.  You have a shaker of salt and pepper, why not keep a baggie or two (well in my case, three) of these mixtures in a drawer.  





I mean really... Can you possibly imagine the taste of biting into this stromboli with the nice coating of roasted sesame adding to the taste.  Just typing this, I have the memory taste in my mouth... 


OK, here's the recipe...


Could not be easier to make...

1/4 cup White Sesame Seeds
1/4 cup Black Sesame Seeds
1/4 cup Kosher Salt
2 TBS Garlic Flakes


Mix well.  It is best to use as a coating or garnish prior to cooking.  the heat will toast the sesame seeds, increasing their flavor.
