Garlic, Potatoes and Green Beans Warm Potato Salad - 52 Do Ahead Side Dishes


This is a favorite recipe of mine.  Of course, the taters, beans and garlic are flavored with a delicious honey mustard vinaigrette, making something unusual and surprisingly fantastic.  But also, makes a great presentation when you slap a big hunk of sliced meat on top.  Like this 30 Garlic Peppercorn Beef Roast shown on a bed of Garlic, Potatoes and Green Beans warm Potato Salad.  the whole thing makes a great presentation and rolls off the tongue!  Makes a beautifully rustic presentation when you can serve it up on a big cutting board and serve buffet style.  Colorful and smells great!

It does come together fast.  I like my beans with a snap and crunch to them, they are sauteed in garlic flavored oil for only a few minutes.  Only time consuming parts are the prep work and cooking the potatoes.  All in all, about 10 minutes hands on work.  Just right to make while your meat is "resting" before you cook.

These were a side dish for a big Whoop de Doo we had in our back yard... 15 Folks gathered to celebrate visiting Blogger Royalty.  Several meats and plenty of variety of sides.  Almost like a Thanksgiving dinner!


OK... Here's what I did...


Garlic, Potatoes and Green Beans
Warm Potato Salad


Ingredients
  • 1 Pound Red Potatoes, skin on, sliced and Medium Diced, Boiled
  • 1 Pound Green beans, ends snaped
  • 6 Cloves Garlic Each Sliced in half
  • 3 TBS Olive Oil
  • 1/3 Cup Honey Mustard Vinaigrette (store bought or easy to make your own)
  • For the Fresh Made Jam Jar Honey Mustard Vinaigrette
  • 3/4 Cup Good Quality Extra Virgin Olive Oil
  • 1/4 Cup Champaign Vinegar
  • 2 TBS Dijon Mustard
  • 2 TBS Honey
  • 1 tsp Salt
  • several pinches of Pepper
  • Optional, Chopped Fresh Cilantro to garnish
Cooking Directions
  1. Prepare the potatoes, boiled in salted water til soft.
  2. Meanwhile, in a Large Saute Pan, heat 3 TBS Olive Oil over medium Low heat. Add the garlic and saute for 5 minutes to release the garlic oil into the Olive Oil. As soon as the garlic begins to brown, add the Green Beans and continue to saute until the beans soften but still have a snap to them. Be careful and not over cook.
  3. Add the drained potatoes and fold to coat everything with the Garlic flavored Olive Oil.
  4. For the Jam Jar Vinaigrette, mix all ingredients in a pint size Mason Jar. Seal and Shake like Heck for a minute (the kids love to do this part). Or you can use a store bought favorite vinaigrette).
  5. Pour about 1/2 a cup over the Beans/Garlic/Potatoes and serve warm.
  6. Garnish with chopped green herbs (I like Cilantro) for a bit of extra color and ENJOY!!!

Fish, Fowl, Hoof, Larry, Snout and Fish!  

First up, the Fowl, that's a BBQ Turkey, brined and injected with Cajun Butter and Glazed with that Jack Daniel's Whiskey BBQ Sauce.
Second is the Hoof, a 30 Garlic Peppercorn Beef Roast.

And last but not least... the Fish is an absolutely amazing Cranberry Walnut sauce Sugar Cured Whole Salmon Filet.

But even Larry does not travel 4,000 miles in a rolling Studio Apartment on Meat alone... Come back all this next week for my side dishes, desserts to go along with all that meat.

I started with a spectacular presentation of a simple Jell-o salad (Dessert???).  Just a little extra effort and I had Stained Glass Jell-O, worthy of any Church PotLuck.

And then I whipped up a quick and easy faux Succotash (no Lima Beans) of corn and tomato relish (salsa, or... well, why not go ahead and call  it a Succotash!) that added bright colors and a unique combination of tastes (and only takes about 10 minutes to make)!

I did serve two kinds of potatoes, not only these, but I also WHIPPED up what I consider the world's BEST Garlic Mashed Potatoes.  These have it all... BACON, Garlic, A secret ingredient that leaves them with a hint of natural sweetness.  They are creamy yet still have a little bit of texture lumps.  I like a few  skin on potatoes so there are bits of red potato skins for color, texture and health. Making mashed potatoes for any group is always tough as people like what they like and question why anyone would make something new.  But for me at least... BEST EVER GARLIC MASHED POTATOES!

Now we are into the side dishes (and haven't even started the pies yet)... 9 Dishes and still rolling along.  See you tomorrow!
