Bacon Sizzled Shrimp - SHRIMP WEEK Day 6
At last - the end is near... But then again, too near to mention...
Oh, wait, I just did mention the end of Shrimp Week is coming up tomorrow. Shrimp week, we hardly knew ye.
But before you get too depressed, here is a real winner! Did someone say bacon???
Most of this recipe came from a Bobby Flay Throwdown TV show. That is one of my favorite series to watch. Love the idea of similar dishes, each cook showing their own favorites.
Here's what I did...
1 pound shrimp (for this recipe, I used the largest I could find at a reasonable price)
4 slices crispy Bacon, chopped (SAVE THE GREASE)
Juice of one Lemon
2 tbs fresh chopped Cilantro
2 tbs fresh minced Garlic
1/4 cup sliced Green Onions, thinly sliced
As with all the other shrimp recipes this week, everything cooks and comes together fast. So Mise en Place is very important. That is, have everything diced, chopped, minced and close before you add the shrimp to the hot oil.
First thing, cook the bacon. Once it is cooked, remove from the oil and break up the bacon to bits.
Now we cook the shrimp in the HOT bacon grease!
When you put them in the grease, stand back as they do sizzle... Add the cilantro and the garlic. Sauté away for only 2-3 minutes. The shrimp gets plenty hot.
Plate and add the bacon, green onions and lemon juice!
I served this with an incredible polenta... Feta cheese, balsamic vinegar and smoked paprika... And some of the bacon from the shrimp accidentally was added to the polenta (lucky accident). But that's a post for another day.
Out on our deck, listen to the stories of the outside world (simple salad of tomato slices and some amazing marinated mozzarella cheese). And tonight we drank a "Dirty Arnie" (3 parts lemonade, 1 part FIREFLY brand sweet tea infused vodka)
And for dessert, an ARIZONA SUNSHINE LEMON TARTLETTE, but that is also a post for another day...
You're killing me with all this good looking shrimp. How much is a plane ticket to get me down there :-).
