Roasted Asparagus with a soy/honey/RUM sauce!



I love asparagus.  Especially grilled, but I am sure you are getting tired of me complaining about no grill, so we will drop it for a while.  


Next best thing to do to asparagus is to marinade it!  And you just knew it would be a matter of time before I added rum to any marinade...


Sure, why not.  The alcohol does cook out, but the earthy flavor of the rum remains, as well as the sweet contrast with a flavored rum...


Like CRUZAN MANGO infused rum!




Add
1/3rd cup Soy Sauce
1/3rd cup Mango Rum
1/3rd cup Honey


Sweet and salty... Earthy and fruity flavors, marinading into the asparagus...


And mix well.  Personally, love the plastic ziplock bags.  Then prepare your raw asparagus, cutting off at about 5 inches from teh tip (further down, and it gets very woody, impossible to season and just nasty tasting).


Pop them in the bag, get as much of the air out as possible and reseal.


Marinade for 3 hours.  






Bake at 350 for 10 minutes.  Asparagus does not take long to cook, and you want to be careful not to overcook em.


A simple fast and easy side dish that has a unique flavor you will like!


As always, just add rum!.

  8. I never thought of marinating asparagus. Seriously.... I do grill them though, you should try that some time. Wait, you don't have a grill...
    So, make one.... Sheesh!
    Get a couple of slate roof tiles and light a fire underneath.
