Mango Glazed Bacon floating on top of a bed of Garlic Mashed Potatoes covering diced Rib-Eye and surrounded by Cheese and Peas




Now, doesn't that title sound better than
Shepherd's Pie -
just a bunch of left overs?



5 Days and Counting...


2 reasons for making this dish.  First, I am under very strict orders to not buy new food.  We are leaving, and whatever we have hidden in the pantry or fridge MUST be used between now and Saturday, or it gets tossed.  In my heart, good stewards of the Earth do not buy food just so you can show off in a blog post, knowing that perfectly good food will get tossed in the trash.


But a little bit of me still wants to show off in a blog post.... shhh, don't tell my wife.


But look at these colors, and imagine all those tastes mingled together.  Maybe, just maybe, it is just a leftover dish, but it is showing off just a little...




Look at that beautiful hunk of Mango Glazed Bacon floating on top of a bed of mashed potatoes covering diced Rib-eye and surrounded by cheese and peas.  I mean... look, Shepherd's Pie, made from left-overs.


Oh, but there is a second reason for posting this... 




We've been here over 160 days.  We snorkel several times a week.  It is our favorite activity to do.  But, occasionally, we think we have seen it all, Sharks and Octopus; Crabs and Lobsters; Eels and Rays and a hundred types of fish in all colors of the rainbow.  But just this week, we saw this guy for the first time.  Beautiful glowing colors, flowing tail and fins as well as pretty big for a tropical fish.  He is at least a foot long.


I wonder how many other things I haven't seen.  I can't spend hours in the kitchen, I have a limited amount of time to go snorkeling.




And exploring... Here Jackie and I are at the Baths in Virgin Gorda, one of the British Virgin Isles.




There are so many beautiful things to see and do...




My friends, I'm not in Kansas any more... But will be soon.


And besides look what I found in my fridge and pantry...




About 1 pound of left over Pan Seared RIB EYE STEAK with a Cognac Pan Sauce (diced)
1 can of Creamed Corn
About 1 pound of left over Mashers - Garlic Mashed Potatoes
1 cup shredded Colby Jack Cheese
1 cup of left over Peas with Sautéed Garlic, Onions and Mango Glazed Bacon

  • Mix the Steak and Creamed Corn, 
  • line a baking dish with the steak and corn,
  • Top with the mashers,
  • add the cheese,
  • add the peas
  • bake in a pre-heated 350 degree oven for 30 minutes

 If you get a chance, eat fast and go see the world... who knows what you are missing...

  1. What a beautiful tropical fish - wonder what he is? I can't believe your time is ending in paradise. Keep taking those gorgeous photos for us.

  2. I can't believe it is almost over. What an adventure you have had. What makes you think bloggers just cook to impress. What a ridicuous idea. :D I am anxious to see what else you cook in the next five days. Have a safe trip home.

  3. First of all, you guys both look awesome! The warm tropical climate must agree with you :P

    This shepherd's pie looks fantastic. I would never know it was a clean out the fridge meal.

  4. Yes that is a mighty fine (and drool worthy)idea for a "shepherd's pie". We've been so busy moving into our new house these last two weeks, we didn't realise your time in paradise has aleady slipped by. Are you at least excited about getting back to the cul-de-sac?
