Caribbean Pineapple Jerk Chicken Wings

OMG...


OMG OMG OMG OMG OMG OMG...

Oh My God...


Not just a little good, but a really good chicken wing recipe.  Now, everyone assumes they have a great wing recipe, and I have had plenty of great wings.  It is my appetizer of choice at bars.  There are lost of great BBQ wing recipes.


BUT... this one is "extra" special!  Will make you say OMG!!!


  Back when I lived in town (Charlotte Amalie, our first two weeks on the island, we lived in a hotel), I found a favorite spot for happy hour...

They featured these wings, with a pineapple Jerk sauce.  While town is only 7 or 8 miles away, returning for wings is just not in the near future.  So, yesterday i decided to see if I could recreate.  All I had to go by was the name.  I did not have a jerk spice dry rub, but I was able to find a jerk sauce.  I also had some canned pineapple slices.  Those were the basics, I started fudging around a bit to get what I wanted...

First thing, out of the box I took a paper towel and dried the chicken parts.  This helps the wet rub to stick.

Next, i started making a formula...

I started with equal amounts... 

1/4 cup pureed Pineapple
1/4 cup Jerk Sauce

I tasted... it had all the elements, but still was not as good as wikkeds.

I had a little Miss Anna's Sweet and Sassy sauce (a local "hot sauce", actually, it is a VERY good sweet spiced sauce).  So, I added 1/4 cup of that... still not right, but closer.  The wings needed that red spiced look and taste.

I decided what I needed was a bit more heat, so I doubled the amount of jerk sauce...

1/2 cup Jerk Sauce
1/4 cup pureed Pineapple
1/4 cup Miss Anna's sweet and sassy

which gave me enough sauce to coat 2 pounds of wings!


No grill :(

So I have to bake these...

375 degrees for 50 minutes... I baked on parchment paper to make clean up easier.



And not just a little good... REALLY GOOD.  The sugar in the pineapple caramelized, and the wings crisped up nicely.  The heat was there from the jerk sauce, but also the sweet from the pineapple really shown through.

If I had my grill, I might consider a dry rub of jerk spices, and then apply a wet rub/glaze of pineapple concentrate (what i actually believe Wikked does).  But, i don't have a grill, so until i have access, these BAKED wings are as good as it gets...

And bottom line.

OH NY GOD!!!

  10. I can believe they're OMG good based on what I read and see. Next topic rice. Try a test using regular rice and whiskey. I'd work with half portion to see what the alcohol does to the rice. The rum will definitely work in a sweet rice dessert but it may be too much for a savory. When in doubt try it out (with cheaper stuff that will mirror what you're attempting to do). I'm brave, not heroic :-)

  18. Okay, I am officially convinced 1)That these wings taste as good as they look and 2)That food bloggers can read each others minds. I just had Michael make me Hop's Restaurants Walker's Wood Shrimp and Jamaican Top Sirloin over the last few nights so I could put them on my blog. I love the use of pineapple for something other than sticking on a Ham for the holidays ;D ! PS- You can order the Walker's Wood Seasoning on line and I just know you would LOVE it. Nice and spicy.

  22. Siracha worked really well. I can see how jerk would be amazing too. You have my mind going. I have a jerk rub/mojo deal that I used for jerk chicken, I might have to try it on wings very soon. Great inspiration, Dave!
