Recipe #15 - Sides - Dan Quayle Potatoe medley

Oh sweet Jesus, I miss him so... Today is the 21st anniversary of the day Dan Quayle accepted the nomination for Vice President of the United States in New Orleans! (have I mentioned I am heading to the big easy for a vacation in just 6 and a half weeks). For those youngsters among you that don't remember the complexity of Vice President Dan, take a look at some of his greatest hits...



But food bloggers everywhere can thank Dan for helping us to spell Potato correctly every time, without using spell check... Thanks to Wikipedia for the following...medley

"Vice President of the United States Dan Quayle became notoriously associated with this misspelling in a June 15, 1992 incident. Quayle went to a photo op at Munoz Rivera School in Trenton, New Jersey, where he was to officiate a spelling bee by drawing flash cards and asking students to write the words on the blackboard. Twelve-year-old William Figueroa wrote potato, but Quayle prompted him to append an "e" which, according to Quayle's 1995 autobiography Standing Firm, was the spelling on the flash card.[1] This incident occurred even though Quayle had inquired about the validity of the incorrectly manufactured flash cards with event staff and had the tacit approval of the event's onlookers.[2]The incident made national news in the United States and became a source of entertainment for the tabloid newspapers in the United Kingdom. For the June 25, 1992 rerun of The Simpsons episode "Two Cars in Every Garage and Three Eyes on Every Fish", Bart Simpson's opening chalkboard gag was hastily changed to read, "It's potato, not potatoe." This was also the cause of a Saturday Night Live episode "Mr. Casual Sex", in which Rob Schneider launches into a tirade against Quayle by saying that he is not qualified to discuss family values as he cannot properly spell potato."
Dan Quayle, Some say simple, some say complex. My Dan Quayle Potatoe Medley... Incredibly simple to make, yet very complex taste that will Shirley please (and don't call me Shirley).

OK, in all seriousness, this is one of those "go to" recipes, that came about when I was informed about an hour prior to guests arriving that i was expected to entertain with whatever I had in my refrigerator. It is also a great way to get rid of one of those opened and 2/3 used bottles of salad dressing that always seem to be hanging around your refrigerator door.

I will give you two different ingredient lists that will give you the same result...

Here is the ingredient list for the complex Dan Quayle Potato Medley...

2 pounds of potatoes, cut into about 1 inch cubed sections. I like the red potato for these.
1 whole red bell pepper (cored, with seeds removed cut into 1X2 inch sections)
1 whole green bell pepper (cored, with seeds removed cut into 1X2 inch sections)
1 whole Red Onion (cut into 1X2 inch sections, each layer separated )

1/2 Cup Olive Oil
1/4 Cup Apple cider Vinegar
3 garlic Cloves (diced as tiny as possible)
2 teaspoons diced chopped parsley
1 teaspoon sugar
1 teaspoon salt
1 teaspoon pepper

OR, for the Simple Dan Quayle Potatoe Medley...

2 pounds of potatoes, cut into about 1 inch cubed sections. I like the red potato for these.
1 whole red bell pepper (cored, cut into 1X2 inch sections)
1 whole green bell pepper (cored, cut into 1X2 inch sections)
1 whole Red Onion (cut into 1X2 inch sections, each layer separated )

1 Cup from a bottle of Garlic Vinaigrette salad dressing And that's it for the ingredient list.

Actually, any brand or type of Vinaigrette salad dressing will do nicely, spend a lot on Newman's Own, or do what I do, and by the cheap stuff from the dollar store (as shown in the photo, next to my Pillsbury Doughboy Cookie Jar and my very collectible funny nose and glasses autographed by Star Trek star, Wil Wheaton (Wesley Crusher)... BTW, Hard to make a bottle of salad dressing look interesting, but I tried. And another BTW, Wil is a fellow blogger, who never mentions food (that I can remember) in his blog, but you can find it by clicking HERE.

So, which sounds easier, mixing all those ingredients in the Complex Dan Quayle recipe, or just using a little salad dressing in the Simple Dan Quayle recipe?

Which ever recipe ingredient list you decide to use, mix everything together, coating the potatoes, peppers and onions well. Dump the potatoe medley into a casserole pan and put on the grill over indirect heat for an hour and 15 minutes (or back in an oven for the same amount of time at 350 degrees.

Just like Dan Quayle, quick, simple and goes a long way taste wise, considering what you have to work with.
