I loved readin...Dave, what an introspective post... I loved reading every word of it. Kudos to your wife for being more than a drone, more than a cog in a big machine... I know there is truly no such thing. I'm betting without her they wouldn't have done such a fantastic job, or been able to get done in 6 months!!! :) I totally understand your happiness at coming home yet your reluctance to leave the island. And rising to the food challenges you had there, well, that's just awesome and such a great learning experience for you. Way better than Pop-Tarts. LOL<br /><br />I'm loving the sound of that pepper/pineapple pesto, gonna have to give it a whirl fershur.<br /><br />Re: canning tomatoes. My mom always canned fresh tomatoes, period. Then used them for whatever all winter long. I've been researching all kinds of canning recipes for sauce, salsa, etc. but I think I'm going to keep it generic and just can the tomatoes, so then I'm not limited in my future usage. We love our spaghetti and other italian foods, so I'm sure much will be used for sauce, and yet we love our salsa too. You are my hero and so are all of the dedicated people of our government agencies who track down the people who want to destroy us. <br /><br />Dave, you'll find at home you are much better at substituting ingredients and being creative when you run out of things.
