Pineapple salsa (and other fruity salsas) are definitely more of a Texas coastal dish to go with fish, as they are not seen much throughout the rest of Texas. Change your foo foo mixed drink to some kind of margarita and you're next Texas themed dinner party would be a success! I know MINE were not as small as the recipe called for and I wasn't going to measure them. Besides...my hands were cramping! LOL. Let's just say...for our friends and family, it was a labor of love. I did cut mine bigger, but that's because I buy a big pork shoulder at the beginning of every month and break it down into 2" chunks and freeze it in smaller amounts. I wasn't gonna go buy a new shoulder when I had that waiting for me. I just cut them up a bit longer. I noted on my post how I cooked it a little longer (& differently). One idea for cutting down on prep time...buy a boneless pork butt! lol.
