Much like your five spice, a little of the chipotle spice goes a long way. I find it is best when you make a sauce with it, rather than applying directly on the meat. This recipe sounds really good with the apple sauce!<br />I have been the griller in our family since my husband and I were married. that's not to say that he hasn't done it a few times. I had begun teaching myself before I met him and the last couple of years, I've become more interested. Both of our boys like to grill and our oldest one asked for a smoker for his last birthday. Guess it's rubbing off! That's what recipes are all about - a starting idea :) I love the idea of using pork as it pairs nicely with apple. I'll bet the pineapple would go well with the chicken too. The chipotle sounds like a nice addition as well. <br /><br />I really like how you experimented using the oven. I used the outdoor grill even though I have an indoor grill cartridge for my stove. What about my fabulous grill and smoker???...What?? What about my fabulous grill and smoker??? LOL! Honestly, I wouldn't have a clue what to do with either of them! My bro owns a very nice state of the art grill and a smoker. He makes his own bacon. Unfortunately, he lives in the US some 500 miles away from me so I don't get homemade bacon all that often. :-P<br /><br />I'm very humbled that I inspired you. Thank you!! Taking a page from your blog, I bought some chipotle powder this morning! I'm gonna try adding some southwestern flavor to my food. Maybe I'll do some shrimp and pineapple kebobs with the chipotle.
